Hi
I too am doing the Chocolate Raspberry Port Kit. I am a few days behind you and I have a couple of questions. Did you add the F-pack at this point? And what was your Specific Gravity?

I added my Chaptalisation sugar on 1/6/08 (did not take a S.G. reading but it should have been 1.020 - 1.025 because I was at 1.011 on 1/1/08 waiting to get under 1.010) Nine days later on 1/15/08 the S.G. was 1.012 so I racked the wine into the 3 gallon carboy. Now this morning 1/26/08, I just tested it again and it is still at 1.012. It would appear to have stopped fermentation but according to the directions, it should have dropped to 1.000 or less by now and must be at or below that to proceed with the Stabilization and clearing and the addition of the F-pack.

I plan to leave it for another week now and see what happens. I was just wondering what your readings were and if you have completed step 3?

[...] Too much Blood in my Winestream wrote a fantastic post today on “Day 6″Here’s ONLY a quick extract SG was stable, so its time for the next step. First off, I sterilize a carboy. Now to drain the fruit bag. I do that the easiest way I know. [ Draining] Once it is draining, I put a filter mesh over the end of the syphon. These are great to keep the chunks from being sucked into the fermentor. [ Filters] So, [...]

[...] Too much Blood in my Winestream wrote a fantastic post today on “Day 4″Here’s ONLY a quick extract Looked in tonight after work. Hmm. Airlock is quiet. Sterilize my mixer yet again and open it up. Very little foam, but still some bubbles. I give it a good mix, check the SG. Its at 0.992. Reclose it. Airlock is bubbling again, but slowly. Fermentation is almost finished. If SG is the same tomorrow, I’ll rack it into a carboy for the [...]

Mmmm I can smell it from here. I'm a wine kit maker myself and haven't been brave enough to go beyond that yet. I'll be curious to follow how you do. Good luck!

I guess I should have made jam, but that wine's very drinkable. Goes nicely with dessert.
